For Day 3 of the Write 31 Days Challenge, I’m going to change things up a bit and include a recipe for Creamy Spinach & Mushroom Spaghetti.
This is not a typical recipe for our family, but if you want to lighten things up or have a meatless meal (which is great for the budget!), you are gonna love this.
t into the recipe, let me give you a little peak into our life for last night (after I posted yesterday) and today.
Last night we watched Poldark! Season 2 started last week and already, we’re hooked again! The only thing that stinks is we watched the 1st season on a binge… this time we’re having to wait week to week and gosh, what a bummer! 😉 Ha!
Today was a roller coaster. I got a very early morning (wake-up!) call from my oldest child letting me know that he’d been in a minor accident. Nobody was hurt (praise the Lord!) but needless to say, I couldn’t go back to sleep.
After poking around trying to shake my nerves from my morning phone call, I finally got up and around and got ready for a lunch date with my good friend Kristy. It was a church-related business lunch, but it was such a refreshing day to be able to visit and talk and hang out.
For a couple of hours, I even managed to put the accident out of my head and not feel sick over it. That’s always a good sign of great company 🙂
We ate, we shopped (at Walgreens & Walmart – nothing glamorous), and then we had Sonic for dessert. What could be better than that?
The only other notable thing for the day? The hubby & I did a kettle bell swing workout this evening. I may be blogging from my bed tomorrow as a result… we’ll see 😉
Okay… so that was pretty much it…now, on to the recipe!
- 1 Pound spaghetti,cooked according to package directions
- 1 Cup sliced mushrooms
- ½ Cup chopped spinach
- 2 Tbsp cream cheese
- 2 Garlic cloves, minced
- ¼ Cup milk
- Drizzle olive oil
- 1 Tbsp onion powder
- 2 Bay leaves
- Salt and pepper to taste
- In a skillet over medium heat, drizzle olive oil and cook the garlic with the mushrooms for 3-5 minutes.
- Add the cream cheese, milk, spinach, onion powder, salt, and pepper, cook for another 10 minutes. Stir occasionally.
- Remove from the heat and set aside.
- Drain and discard the water and leaves.
- Divide the spaghetti into bowls, pour the sauce over.
- Serve and enjoy.
