So, I was pretty excited to be baking today. I haven’t had a cake order in a few weeks (other than the Fall cakes I volunteered to make for church), so I had been missing my little cake hobby.
Today my order was pretty simple, or so I thought. Two dozen strawberry cupcakes, with cream cheese frosting. My husband’s friend at work wanted them decorated with Hot Pink frosting for his sisters birthday. Sweet, right? So, my plan was to whip out 24 cupcakes that looked like those above.
First off, I baked a two dozen cupcakes, but for some reason, most of them just plain didn’t turn out right. A few were usable (see the ones above), but most of them either ran over and had very rough ugly tops, got extra brown around the edges, and some the edges just tore off as I pulled them out of the pan…
So, being the perfectionist person that I am…I couldn’t send these less-than-ideal cupcakes to a customer. So what did I do? I decorated the ones I could use and decided to whip out another two dozen cupcakes. No problem..I still have all day and night to get them ready.
But when I pulled out the second batch…guess what? They were ruined too! The bottoms of every single cupcake was scorched…
I cooked them in the same oven, on the same temperature, and in the same pans that I always use, but these burned. So, I couldn’t use them either. Ugh.
At this point I’m out of ingredients to do more, so I decide to focus on tidying up the kitchen while I wait for hubby to get home so I can run to the store and get more stuff. In the process, I decide to go ahead and refrigerate the cupcakes that I did finish. I got the first ones in there safely…
But the second plate of cupcakes? They end up like this…
Yep, I dropped a whole plate of them onto the floor. I just wanted to scream. Then laugh. Then whip out the camera and write a blog post. Anyhow. Maybe it was a sign. It looks like that might not have been such a bad thing after all… the bottoms of those look pretty scorched too (or maybe there’s just terrible light in that room…to go with the butt-ugly linoleum)!!
So now I sit here…5 hours after I started, waiting on my hubby to get home so I can start all. over. again. He needs to take the cupcakes to work with him in the morning for the friend who ordered them, so it seems like this might be a very late, long night.
Update:: see the finished cupcakes here. I finished around 8pm – only 9 hours after I started my 3 hour project! I just have to smile and go on….

Oh you poor thing! I have had days like this and they just aren't fun! At least the first ones turned out so pretty! and you know the second/third batch will too!
